Ingredients

Preparation time: approx. 30 minutes
• 500 g mixed and washed berries (raspberries, strawberries, red currants)
• 300 g peeled tomatoes
• 2 tablespoons chopped shallots
• 1 teaspoon chopped ginger
• 2 tablespoons olive oil
• 1 teaspoon fresh thyme leaves
• 50 ml apple vinegar
• 50 g cane sugar
• 1 pinch cinnamon powder
• 1 Salt and pepper

Berry Ketchup

Directions:

1. Heat the olive oil in a pot, add the chopped shallots and sauté. Add the berries and all the other ingredients and cook for around 20 minutes with the lid off until the mixture reduces.

2. Finely purée the berry-tomato pulp and season with salt and pepper. Pour the ketchup into bottles while still hot.

Preparation time: approx. 5 minutes
• 2 stalks of rosemary
• 1 stalk of thyme
• 1 small red chilli
• 2 peeled and halved cloves of garlic
• 250 ml olive oil

Herb Oil

1. Place all the ingredients in a bottle and pour the olive oil on top. Leave to marinate for a couple of hours.

Preparation time: approx. 20 minutes
• 1 tin of sardines (145 g)
• 30 g black olives without stones
• 2 tablespoons small capers
• Grated zest of half an organic lemon
• 100 ml olive oil
• 1 small red pepper
• 1 clove of garlic
• 2 tablespoons chopped flat-leaf parsley
• 1 teaspoon chopped basil
• Sea salt
• Freshly ground pepper

Sardine-Caper Oil

1. Peel the garlic and chop finely. Drain the sardines and cut up into small pieces with the red pepper and olives. Then mix with all the remaining ingredients
